Family recipes also reign supreme at Nonno's Ristorante in Bradley Beach, where John Falco is the only one who makes the meatballs.
The "family specialty" variety are "my great-grandmother's recipe," said Falco's son, Nick, who owns the restaurant with his father. "He learned those by sitting with her on Sundays when he was a kid."
Their baked meatballs are made with four meats - beef, veal, pork and lamb. "Each gives a little more flavor, a little more substance," Nick said. Like Rallo, the Falcos use Italian bread in theirs, plus a little bit of breadcrumbs.
"Everything is made by hand; my father literally mixes 30 pounds of meat, with the breading, the garlic, the herbs, the spices," Nick said of their meatballs, which are served in house-made, San Marzano tomato sauce on spaghetti or as a side dish.
Nonno's also serves a Sicilian-style meatball; "they were my favorite growing up," Nick said, remembering how these looked just like regular meatballs until you discovered the raisins and pine nuts tucked inside. "We would always fight for them at the table," he said.
"The raisins, they hydrate a little and plump up and absorb the flavors of the meat," he said, "and when you bite into them, you get the warm sweetness coming out of them. They're really good."
